CHARACTERISTICS OF THE FRESH FISH:

SKIN- The skin of the fresh fish looks bright, shiny and moist. Scales are firmly attached to the skin. In case of stale fish there are signs of skin being wrinkled away from the flesh. The surface of fresh fish is free from any dust, diet and slime.

TEXTURE- Fresh fish possess springiness when pressed with thumb. The flesh is firm to touch with no traces of browning or drying around the edges.

EYES- The eyes of the freshly caught fish are bright and clear. Eyes are convex with black pupil and translucent. Make sure that the eyes are NOT SUNKEN. avoid fish with cloudy eyes.


GILLS- The gills of freshly caught fish are bright red. In case of stale fish, gills are brown and opaque.

BELLY- Check for bloated belly, which is a sure sign for stale fish.

ODOR- DONT'T purchase a fish with strong fishy odor. Look out for yellow spots on the surface as they indicate rancidity.

LIFT AND CHECK- When you split the fish along the backbone and lift it, the bone should stick firmly to the flesh, otherwise the fish is stale.
