Sabudana Khichdi- A perfect snack for the fasting season
Sabudana Khichdi is a perfect dish for those on a fast or vrat.It is a very tasty and extremely easy snack which you can have in your breakfast also.
It is a gluten-free and a vegan dish. It is easily digestible and being rich in various nutrients it provides an instant boost of energy.
You can have this khichdi along with some yogurt or a cup of masala chai.
This Janmashtami I had this sabudana khichdi after my day-long fast.
Now let's get into the recipe of this healthy and lip-smacking dish.
INGREDIENTS:
1. 1 and 1/2 cup- Sabudana
2. 2 medium sized- Potatoes
3. 1 medium sized- Tomatoes
4. 1- Carrot
5. 1 inch piece- Ginger
6. 1- Green Chilly
7. Half- Lemon
8. 2 tsp- Coriander leaves
9. 1 Cup- Peanuts
10. 5-6 Kadi Patta(Curry leaves)
11. 2- Dry Red Chillies
12. A pinch of salt
13. Less than half tsp- Jeera
14. A pinch of hing(Asafoetida)
15. 2 and 1/2 tsp- Ghee
16. A pinch of sugar

PREPARATION TIME: 20 minutes COOKING TIME: 5 minutes
TOTAL TIME: 25 minutes
PREVIOUS NIGHT-
- Rinse the Sabudana for 2-3 times, soak it and keep it covered overnight.
NEXT DAY-
- Roast the peanuts in a pan.
- Crush more than half of the roasted peanuts using pestle and mortar or a grinder to obtain coarse powder.
- Keep the rest of the roasted peanuts aside.
- Boil the potatoes.
- Chop the tomatoes, carrots, green chillies and coriander leaves in small pieces.
- Strain the potatoes and let them cool for few minutes; cut the potatoes in small pieces.
- Strain the sabudana if water is present, then spread the sabudana on a plate for 2-3 minutes.
- Mix the sabudana with the crushed peanuts and then cover it and keep aside.
- Heat a pan and then put 2-3 tsp ghee into the pan kept on medium flame.
- Now put all the chopped vegetables into the pan along with some dried red chillies, curry leaves and roasted peanuts and fry for few minutes.
- Add the potatoes and fry again for few seconds.
- Add a pinch of salt and cook for 1-2 minutes.
- Add a pinch of sugar, spme lemon juice and coriander leaves on top.
- Your delicious sabudana khichdi is ready.
